Red Wine & Balsamic Vegetable Stir Fry


This recipe is first for a reason; everything about it is simple. It uses straightforward ingredients that have health benefits your body will thank you for, and it's easy to prepare. This recipe captures the essence of this diet plan because it's about getting essential nutrients from pure, natural ingredients, while tasting good at the same time.


I love my vegetables raw, but when I am craving a meal with additional flavor is when I pull out the red wine and balsamic.

I posted the grocery list for this recipe earlier in the week, but here's a refresher on the ingredients it calls for:

-2 cups of sliced cremini mushrooms
-5 cups of kale
-1/4 cup of diced yellow onion
-2 to 3 tbs. balsamic vinegar
-1/8 cup of red wine (cabernet works best; can use cooking wine)

Begin by heating a cast iron skillet and then sautéing your diced onions and mushrooms together. Once the mushrooms appear to have cooked and the onions are browning, add in your balsamic vinegar followed by your red wine. Stir the mixture and let it simmer for a few minutes then finish it off by adding in your kale. Mix the ingredients together and let them cook for 3 to 5 more minutes, or until your kale has cooked to your desired state.

My favorite thing to do with this dish is to put it over a bed of quinoa, or brown rice and quinoa pasta. You can complete your meal by adding in a side of protein, like salmon or chicken, or just leave it as is.
